Gourmet Sludge

Servings: 4-6

Ingredients:

  • 1 teaspoon olive oil

  • 1 onion, chopped

  • 1 potato, chopped

  • 2 cloves garlic

  • 2 (14 oz) can diced tomatoes

  • 1 (14 oz) can black beans, rinsed

  • 1 (14 oz) can green peas, drained

  • 2 teaspoon salt

  • 1 teaspoon pepper

  • 2 teaspoons curry powder (optional)

  • pinch of red pepper flakes

  • 1 cup red lentils

  • About 1 cup water

  • Greek Yogurt to top (optional)

Instructions:

Heat olive oil in a medium-sized, heavy-bottomed pan over medium heat.

  1. Add the chopped onion and cook for a few minutes until softened but not browned.

  2. Stir in the garlic and cook for 30 seconds.

  3. Add all the remaining ingredients (except the lentils). Cook covered for 20 minutes.

  4. Add the red lentils and about 1 cup of water. Stir, cover, and cook for an additional 15 minutes or until the lentils and potatoes are tender.
